In order to delete a saved piece you can go to My Computer > Local Disk (C:) > Program Files > Finale NotePad (the number of the version). In this folder you will find your piece. Click on it and press delete.

The notes are all very close together, almost touching - how can I spread them? Also, sometimes one bar on the last line stretches all the way across. Can I move some bars around to have a more even distribution?

No. There is no way to change the position of the notes or the position of the bars. These are pre-defined by the developer and are changing while you input data. The only thing that you can change regarding the format of the page is the paper type, the orientation and the margins. These settings are available in the application, under File > Page Setup.
